|This is a fantastic summer soup! You can easily spice it up with additional herbs or a little garlic, if you like.
5 cups ripe fresh tomatoes, chopped coursely
|1. Add tomatoes, ginger, allspice, salt and pepper to a blender or food processor. Pulse until tomatoes are coarsely pureed, but not liquefied.
2. Add cream and herbs and pulse only long enough to blend thoroughly.
3. Transfer soup to a large bowl, cover, and refrigerate for about an hour before serving. garnish with thinly sliced lemon and fresh parsley leaves.
