Italian food is the world's most romantic. Take a day with your loved one and prepare a delicious Italian dinner from scratch. Choose from gnocchi, homemade pasta, espresso granita and much more. This dessert has it all, taste, ease and elegance. Start about two hours before time to serve to allow the granita to freeze.

This recipe makes about 4 healthy servings.

1/2 cup finely ground espresso
1/2 cup sugar
1 vanilla bean sliced lengthwise
2 cups boiling water
2 cups whipping cream

1. Place the dry ingredients in a bowl. (a mixing bowl works great and a french press coffee pot is ideal!)

2. Add the boiling water and stir. Allow the mixture to steep for 2 - 3 minutes. Strain through a coffee filter into glass container and place in the freezer.

3. To completely set up the granita needs about two hours. Periodically take a fork and "fluff" it up. You want it to have the texture of snow.

4. Just before serving add the granita to an elegant fluted glass. Then a layer of whipped cream, then another layer of granita. Top with a final dollop of whipped cream. Amazing.
